A biscuit against cholesterol
The innovative applications in the agri-food and environmental sector is business as usual for the Technological Educational Institute of Thessaly. With exiguous means, either by their own personnel or in collaboration with major state and private agencies, the Institute’s product portfolio, is rich. And not by exaggeration. This period, one more additional product, exclusively produced by the institute hits the road for the market and not only limited to the domestic one. “CRUKIES”, is a biscuit of unprocessed oats which assists in sustaining normal cholesterol levels in the blood due to the B-glucan that it contains, product of the research efforts that take place in the institute.
Thanks to the collaboration between the institute and Violanta, a major producer of cookies and biscuits, the product took its final form and reached the Parisian exhibition SIAL 2016, making good impression and arousing the interest of retail companies from USA and China. «We need added value products which will enable us to realize a new productive model in the country. Our “weapon” is the quality characteristics and the particularity of our products. We cannot compete with the worldwide market leaders in terms of prices or quantities. We want boutique-products with exceptional qualitative and organoleptic characteristics which with the right packaging, branding and promotion can create a differentiated “smart” agri-food model», according to Mr. Manouras, Ass. Professor of the Dept. of Food Technology of the Institute.
